Pimento Cheese Deviled Eggs

These pimento cheese deviled eggs put a Southern twist on deviled eggs, a staple at every potluck, church picnic, backyard BBQ, or family get-together. Filling them with a pimento cheese mixture really adds pizzazz to the tried-and-true.

Pimento Cheese Deviled

Ingredients

  • 12 large hard boiled eggs, peeled
  • 4 ounces sharp Cheddar cheese
  • 1/2 cup salad dressing (such as Miracle Whip®) or mayonnaise
  • 1 teaspoon yellow mustard
  • 1 teaspoon cider vinegar
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • salt and freshly ground black pepper to taste
  • 3 tablespoons finely chopped pimentos, well drained, plus more for garnish
  • 1 slice cooked, crisp bacon, crumbled
  • 1 tablespoon chopped fresh dill (optional)

Instructions:

1. Hard Boil the Eggs:

  • Place the eggs in a single layer in a saucepan and cover them with water.
  • Bring the water to a boil over medium-high heat.
  • Once boiling, reduce the heat to low and let the eggs simmer for 10-12 minutes.
  • Remove the eggs from the heat and immediately transfer them to a bowl of ice water to cool for about 5 minutes.
  • Peel the eggs under cool running water and pat them dry with paper towels.

2. Prepare the Filling:

  • Slice each egg in half lengthwise.
  • Carefully remove the yolks and place them in a mixing bowl.
  • Mash the egg yolks with a fork until they are smooth and crumbly.
  • Add mayonnaise, diced pimentos, shredded cheddar cheese, Dijon mustard, Worcestershire sauce, garlic powder, salt, and pepper to the mashed egg yolks.
  • Stir until all ingredients are well combined and the mixture is smooth.

3. Fill the Egg Whites:

  • Spoon or pipe the yolk mixture back into the hollowed-out egg white halves, dividing it evenly among them.

4. Garnish:

  • Sprinkle the filled deviled eggs with paprika for added flavor and a pop of color.
  • Optionally, garnish each deviled egg with a small sprig of fresh parsley or chopped chives.

5. Chill and Serve:

  • Place the prepared deviled eggs on a serving platter.
  • Cover and refrigerate for at least 30 minutes to allow the flavors to meld and the filling to firm up.
