California BLT Chopped Bagel

To make this California BLT chopped bagel, you’ll chop bacon, tomato, avocado, and lettuce into a smear of chive cream cheese, then sandwich it into an everything bagel. It’s quick, easy, and so, so good.

  • 1 plain bagel
  • 2 slices of bacon
  • 1 ripe avocado
  • 1 medium-sized tomato
  • 2 leaves of lettuce
  • 1 tablespoon mayonnaise
  • Salt and pepper to taste

1. Cook the Bacon:

  • Preheat a skillet over medium heat.
  • Place the bacon slices in the skillet and cook until they are crispy, turning occasionally to ensure even cooking.
  • Once cooked, transfer the bacon to a paper towel-lined plate to drain excess grease. Set aside.

2. Toast the Bagel:

  • Slice the bagel in half horizontally.
  • Place the bagel halves in a toaster or toaster oven and toast until they are golden brown and crispy.

3. Prepare the Avocado:

  • Cut the avocado in half and remove the pit.
  • Scoop out the flesh and place it in a bowl.
  • Use a fork to mash the avocado until it reaches your desired consistency.
  • Season with salt and pepper to taste.

4. Slice the Tomato and Lettuce:

  • Wash the tomato and lettuce leaves under cold water and pat them dry with a paper towel.
  • Slice the tomato into thin rounds.
  • Tear the lettuce leaves into bite-sized pieces.

5. Assemble the California BLT Chopped Bagel:

  • Spread a generous layer of mashed avocado on each toasted bagel half.
  • Place a leaf of lettuce on top of the avocado spread on each bagel half.
  • Arrange the bacon slices evenly on top of the lettuce.
  • Add a layer of sliced tomatoes on top of the bacon.
  • Season the tomatoes with a sprinkle of salt and pepper.
  • Place the other bagel half on top to create a sandwich.

6. Serve and Enjoy:

  • Slice the assembled bagel sandwich in half if desired.
  • Serve immediately and enjoy your California BLT Chopped Bagel!
